Well, Hello There

FIRST OFF!!

She made it in less than a week! MAD skill!








It has been a roller coaster of weeks these past weeks.
Cooper is busy with school and work. Which he is doing amazing at! I am so proud of him and his growing knowledge of Graphic Design. He really inspires me to work harder and harder. He is truly the hardest working man I have ever met.
I have been busy with my ETSY shop and my little man... Zeke.
Zeke is getting his molars... yea at 15 months. TOP AND BOTTOM.
Whaaa?
Before the top started to cut through he got a case of Hand Mouth Foot (what ever it is called, i should know right?) Disease... YUK. Thank you to the Jumping Gym we went to! Think I'm being sarcastic? I am really thankful, I'm sure Zeke built some more immunities while being there...
So, after a few nights with out sleep (I can not imagine how other mothers do it with 2 kiddies) Zeke's top molars started to peek through... uuuuggg. We had a lot of boding time.

Besides all that Zeke has been a charm.
He is starting to talk more and more every day.
He calls horses hor. Hee i love it. His high pitch at the end of hors catches everyones attention in public.
Here is a list of a few words he has been repeating in the past few weeks

He neighs for the horse (priceless)

Da

He now unlocks the car door, with my assistance, every morning when we leave for morning activities. It is routine, when we are home, for him to unlock the front door and ring the door bell about 12 times. He gets the best kick out of it the loud sound of the bell over and over.
I have been trying to be more creative with zeke while I cook dinner so he is not just in front of the TV. The past few nights we have been blasting A Tribe Called Quest and dancing to it while holding on to his horse and lamb. There are no words to describe the little man mimicking my Gangsta body movements.
Love my LITTLE MAN.

Figs Cucumbers Quinoa Pasta























Hello September. Summer is almost gone, the nights are getting a little more chili-perkins justifying wearing a sweater is obvious.
So this month, well last month, i didnt post anything about zeke turning nine months... well he did turn nine months with or without a blog post. He got his first cold 1 week ago. It was the most miserable time for the Zeke, he did not know what was going on with his body. i felt so awful for him.

I would like to post some recipes I KNOW YOU ALL WILL L O V E

I made this the other night, it is a fig and quinoa tabouleh dish. mmm good.

Serves 6 as a side dish

Ingredients:
1.5 cups dry quinoa
3 cups water
6 large figs or 10 small ones, diced
3 tomatoes (heirloom if possible), diced
4 green onions, thinly sliced, white and green parts included
1/3 cup to 1/2 cups loosely packed fresh mint
juice of two lemons
salt and pepper
1/4 cup olive oil

Instructions:
In a large pot, bring the quinoa and water to a boil, reduce the heat and simmer, covered until all the water has been absorbed (about 20 minutes). Remove from the heat, fluff with a for and place in a large bowl to cool for 20 minutes.
Add the figs, tomatoes, green onions, mint, lemon juice. Add salt and pepper to taste and the oil. Let sit at room temperature for another 20 minutes and refrigerate after that if not consumed right away.
